Cheese Tortellini Pepperoni Pizza Casserole



Ingredients:


1 (20 oz) package cheese tortellini
2 cups marinara or pizza sauce
1 ½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional)
½ cup mini pepperoni (or regular, sliced)
1 tbsp olive oil
2 cloves garlic, minced
½ cup bell peppers, diced (optional)
½ cup mushrooms, sliced (optional)
¼ cup black olives, sliced (optional)
Fresh basil or parsley for garnish


Directions:


Preheat Oven: Set your oven to 375°F (190°C) and grease a baking dish.
Cook Tortellini: Boil the cheese tortellini according to package instructions, but undercook by 1 minute since it will finish cooking in the oven. Drain and set aside.
Prepare Sauce: In a skillet, heat olive oil over medium heat. Sauté garlic, bell peppers, and mushrooms (if using) for 2-3 minutes until softened. Stir in pizza sauce, Italian seasoning, and red pepper flakes. Simmer for 2 minutes.
Combine & Assemble: Mix the cooked tortellini with the sauce and pour into the baking dish. Sprinkle mozzarella, Parmesan, and mini pepperoni evenly on top. Add black olives, if desired.
Bake: Cover with foil and bake for 15 minutes. Remove foil and bake another 10 minutes until the cheese is melted and bubbly.
Garnish & Serve: Let it cool slightly, then sprinkle with fresh basil or parsley. Serve warm and enjoy!
