– 2 lbs oxtail, cut into pieces
– 4 cups beef broth
– 2 cups water
– 2 tablespoons jerk seasoning
– 1 tablespoon soy sauce
– 2 teaspoons brown sugar
– 1 onion, sliced
– 4 garlic cloves, minced
– 1 tablespoon ginger, grated
– 2 green onions, chopped
– 1 Scotch bonnet pepper, sliced (optional for extra heat)
– 1 cup carrots, sliced
– 2 cups ramen noodles
– Salt and pepper to taste
– Fresh cilantro for garnish

1. In a large pot, season the oxtail with salt, pepper, and 1 tablespoon of jerk seasoning.
2. Add the beef broth and water, then bring to a boil. Reduce the heat to low and simmer for 2 to 3 hours, or until the oxtail is tender.
3. Remove the oxtail from the broth and set aside. Skim off any excess fat from the broth.
4. In another pot, sauté onion, garlic, and ginger until softened. Add this to the broth along with the soy sauce, brown sugar, remaining jerk seasoning, carrots, and Scotch bonnet pepper (if using). Simmer for 20 minutes.
5. Add the oxtail back to the pot along with the ramen noodles. Cook for 5-7 minutes or until the noodles are tender.
6. Serve hot, garnished with green onions and fresh cilantro.
