Easy Mexican Street Corn

Ingredients
4 ears of corn
1/4 cup mayonnaise
1/4 cup sour cream
1 cup cotija cheese, crumbled
1 teaspoon chili powder
1 clove garlic, minced
1 tablespoon lime juice
Salt to taste
Chopped cilantro for garnish

Directions
1. Fire up your grill to medium heat and place the corn directly on the grate. Let it cook until it’s slightly charred and tender, turning occasionally, about 10 minutes.
2. While the corn is grilling, stir together the mayonnaise, sour cream, cotija cheese, chili powder, garlic, lime juice, and a pinch of salt in a bowl until smooth and creamy.
3. Once the corn is nicely grilled, take it off the heat and let it cool just enough to handle.
4. Brush each ear generously with the creamy mixture, making sure every kernel gets some love.
5. If you’d like, sprinkle extra cotija cheese and a pinch of chili powder over the top for more flavor and a little extra kick.
6. Finish each ear with a scattering of chopped cilantro. Serve it up and enjoy while it’s still warm!
