That’s the best compliment! So glad it wowed your family!
Ingredients:
For the main dish:
1 lb (450 g) ground beef (lean or regular)
1 tablespoon olive oil (if using lean beef)
1 medium onion, diced
2 garlic cloves, minced
2 medium carrots, peeled and diced
1 zucchini, diced
1 red bell pepper, chopped
1 cup green beans, chopped (fresh or frozen)
1 cup corn kernels (fresh, canned, or frozen)
1 cup canned diced tomatoes (with juice)
1 tablespoon tomato paste
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper, to taste
1/4 cup water or beef broth (optional, if mixture seems too dry)
Fresh parsley, chopped (for garnish)
Directions:
Brown the beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up with a wooden spoon. Drain excess fat if necessary. If using lean beef, heat 1 tablespoon of olive oil before adding the beef.
Add aromatics: Add diced onion and garlic to the skillet with the beef. Sauté for 2–3 minutes until the onion becomes translucent and fragrant.
Toss in the veggies: Add carrots, zucchini, bell pepper, green beans, and corn. Stir well to combine everything. Cook for about 5–7 minutes, allowing the vegetables to soften slightly.
Add flavor: Stir in the diced tomatoes (with juice), tomato paste, paprika, thyme, salt, and pepper. Mix well. If the mixture looks too dry, add 1/4 cup of water or broth.
Simmer and blend flavors: Reduce heat to low, cover the skillet, and let everything simmer gently for about 10–12 minutes, stirring occasionally. This helps the veggies get tender and allows flavors to meld.
Finish and serve: Taste and adjust seasoning. Sprinkle with fresh parsley just before serving for a fresh, vibrant touch. This dish is perfect served on its own, over rice, with crusty bread, or even tucked into tortillas!
