Ingredients:

1 cup whole milk

2 cups cheddar cheese, shredded

(Optional but recommended)

1 tablespoon butter

1 tablespoon all-purpose flour (for thickening)

1/4 teaspoon paprika or cayenne pepper (for heat)

1/4 teaspoon garlic powder

Salt to taste

A few dashes of hot sauce (like Cholula or Frank’s) for tang

Instructions:

1. Make a Roux (Optional for extra creaminess):

In a saucepan over medium heat, melt butter.

Stir in the flour and cook for 1–2 minutes, whisking constantly to avoid lumps.

2. Add Milk:

Slowly pour in the milk while whisking to combine.

Heat until the mixture thickens slightly (about 2–3 minutes).

3. Add Cheese:

Lower the heat to low and stir in the shredded cheddar cheese.

Stir constantly until the cheese is fully melted and smooth.

4. Season:

Mix in paprika or cayenne, garlic powder, salt, and hot sauce if using.

Taste and adjust seasoning as needed.

5. Serve Warm:

Great with chips, Dorito mozzarella sticks, tacos, fries — you name it.
