1. Prep the Chicken: Cut the chicken breasts in half lengthwise, creating 4 thinner cutlets. Season generously with salt and pepper on both sides.
2. Season the Flour: In a separate bowl, mix the flour with garlic powder, onion powder, paprika, and cayenne pepper. Stir it up until it’s fully combined. Set aside 2 tablespoons of this mixture for later to thicken the gravy.
3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. While the pan heats up, dredge each piece of chicken in the seasoned flour, coating both sides. Once the skillet is hot, add the chicken pieces and cook for about 5 minutes per side, until golden but not entirely cooked through. Remove the chicken and set it aside on a plate.
