Garlic Butter Zucchini Grilled Cheese

Ingredients (Makes 2 sandwiches)

1 medium zucchini, thinly sliced or shredded

2 Tbsp unsalted butter, softened (divided)

1 small garlic clove, minced

Salt & pepper, to taste

4 slices bread (sourdough, whole grain, or your favorite)

1 cup shredded cheese (cheddar, mozzarella, provolone, or a mix)

Optional: pinch of red pepper flakes or fresh basil leaves

Instructions
Prepare Zucchini

Heat 1 tablespoon butter in a skillet over medium heat.

Add zucchini and garlic; season with salt and pepper.

Sauté for 3–4 minutes, until zucchini is softened and moisture evaporates. Remove from pan.

Assemble Sandwiches

Butter one side of each bread slice with the remaining butter.

Place 2 slices, butter-side down, in the skillet.

Top each with half the cheese, zucchini mixture, optional basil or red pepper flakes, and remaining cheese.

Place remaining bread slices on top, butter-side up.

Cook to Perfection

Grill sandwiches over medium-low heat, pressing gently with a spatula, until golden and crisp on one side (about 3–4 minutes).

Flip and cook the other side until cheese is melted and bread is golden.

Serve

Slice and serve hot — perfect with tomato soup or a fresh salad.

Tips:

Shred zucchini and squeeze out excess moisture in a towel for an even crispier grilled cheese.

Try adding caramelized onions or roasted peppers for extra flavor.
