Ingredients:

1 lb thinly sliced beef (ribeye or sirloin)

4 soft hoagie rolls

1 large onion, thinly sliced

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

8 slices provolone cheese

2 tbsp olive oil

Salt and pepper, to taste

Instructions:

Prepare veggies:

Heat 1 tbsp olive oil in a skillet over medium heat.

Sauté onions and bell peppers until soft and caramelized, about 8-10 minutes. Set aside.

Cook beef:

In the same skillet, add remaining olive oil.

Cook thinly sliced beef until browned and tender, seasoning with salt and pepper.

Combine:

Mix cooked onions and peppers with beef in skillet.

Assemble sandwiches:

Preheat oven to 375°F (190°C).

Slice hoagie rolls lengthwise but not all the way through.

Fill each roll with beef and vegetable mixture.

Top each sandwich with two slices of provolone cheese.

Bake:

Place sandwiches on a foil-lined sheet pan.

Bake for 8-10 minutes until cheese is melted and bubbly, and bread edges are toasted and golden.

Serve:

Remove from oven and serve hot.
