Ingredients:
1 cup cannellini or navy beans
2 cups spinach
1 cup grated Parmesan cheese
4 cups vegetable broth
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil, for sautéing

Instructions:
Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened and fragrant.
Add the beans, vegetable broth, and Italian seasoning. Bring to a boil.
Reduce heat and add the spinach, cooking until wilted.
Stir in the Parmesan cheese until melted into the soup.
Season with salt and pepper to taste.
Serve hot.
