Ingredients:
1 lb chicken gizzards, cleaned
1 cup buttermilk
1 teaspoon hot sauce (optional)
1Β½ cups all-purpose flour
1 teaspoon salt
Β½ teaspoon black pepper
Β½ teaspoon garlic powder
Β½ teaspoon onion powder
Β½ teaspoon paprika
Β½ teaspoon cayenne pepper (optional)
Vegetable oil, for frying

Instructions:
1. Rinse and clean the chicken gizzards thoroughly. Trim off any tough or gristly parts if needed.
2. In a bowl, combine buttermilk and hot sauce. Add gizzards, cover, and refrigerate for at least 2 hours or overnight.
3. In a separate bowl, mix flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.
4. Remove gizzards from buttermilk, letting excess drip off.
5. Dredge gizzards in seasoned flour, pressing to coat well.
6. Heat about 2 inches of oil in a deep skillet or fryer to 350Β°F (175Β°C).
7. Fry gizzards in batches for 5β7 minutes, or until golden brown and cooked through. Do not overcrowd the pan.
8. Drain on paper towels and serve hot with your favorite dipping sauce.
