 Ingredients:
1 1/2 lbs beef stew meat, cut into bite-sized pieces 
2 tbsp olive oil or butter 
1 large onion, diced 
3 garlic cloves, minced 
4 carrots, peeled and diced 
3 celery stalks, diced 
8 cups beef broth 
1 (14.5 oz) can diced tomatoes, undrained 
1 cup pearl barley 
2 tsp dried thyme 
2 tsp dried parsley 
1 bay leaf 
Salt and pepper, to taste 
Optional garnish: Fresh parsley

 Instructions:
1. Brown the Beef:
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Season the beef with salt and pepper, then sear until browned on all sides.
Remove the beef and set it aside.
2. Sauté the Vegetables:
In the same pot, add the onion, carrots, and celery.
Sauté for 4-5 minutes until softened.
Add the minced garlic and cook for another 1 minute.
3. Build the Soup Base:
Return the beef to the pot.
Stir in the beef broth, diced tomatoes, barley, thyme, parsley, and bay leaf.
4. Simmer the Soup:
Bring the soup to a boil, then reduce the heat to low.
Cover and simmer for 1 1/2 to 2 hours, stirring occasionally, until the beef is tender and the barley is fully cooked.
5. Season and Serve:
Remove the bay leaf and adjust seasoning with more salt and pepper if needed.
Serve hot, garnished with fresh parsley if desired.
