Maple Dijon Brussels Sprout Skewers

Ingredients:

1 lb (450 g) Brussels sprouts, trimmed and halved

2 tablespoons (30 mL) olive oil

Salt and black pepper, to taste

2 tablespoons (30 mL) maple syrup

1 tablespoon (15 mL) Dijon mustard

1 teaspoon (5 mL) apple cider vinegar

½ teaspoon garlic powder

Wooden or metal skewers

Directions:

Preheat oven to 400°F (200°C) or heat a grill to medium-high. If baking, line a sheet with parchment paper.

Toss Brussels sprouts with olive oil, salt, and pepper. Thread onto skewers.

In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, and garlic powder.

Brush skewers generously with half of the maple-Dijon glaze. Roast or grill for 18–20 minutes, flipping once, until sprouts are golden and tender.

Brush with the remaining glaze before serving.
