Pot Roast with Carrots and Potatoes

Ingredients:
– 3-4 pound chuck roast
– 1 pound baby carrots
– 1 pound small potatoes
– 1 onion, diced
– 3 cloves garlic, minced
– 2 cups beef broth
– 1 tablespoon Worcestershire sauce
– Salt and pepper to taste or seasonings of your choice
– 1 tablespoon olive oil
– 1 tablespoon cornstarch (optional)

Instructions:
1. Season the chuck roast with salt and pepper.
In a large skillet, heat olive oil over medium high heat, then sear the roast for 3-4 minutes on each side until browned.

2. Place the roast in a slow cooker and add in carrots, potatoes, onion, garlic, beef broth, and Worcestershire sauce.

3. Cook on low for 8 hours or on high for 4-5 hours, until the meat is tender and the vegetables are cooked through.

4. If desired, thicken the sauce with cornstarch mixed with water in the last hour of cooking.

5. Serve the pot roast with carrots and potatoes hot, and enjoy a delicious and comforting meal!
