Southern Fried Shrimp with Red Beans and Rice

Ingredients
1 lb (450 g) large shrimp, peeled & deveined
1 cup buttermilk
1 cup flour + ½ cup cornmeal
1 tsp paprika, 1 tsp garlic powder, salt & pepper
Oil for frying
Red Beans
2 cups cooked red beans (or 2 cans, drained)
1 cup smoked sausage, sliced
1 onion & 2 garlic cloves, chopped
2 cups chicken broth
1 tsp Cajun seasoning
Rice
2 cups cooked white rice
Chopped parsley (optional)

Instructions
  • Fry Shrimp — Dip shrimp in buttermilk, then coat in flour/cornmeal + spices. Fry at 350°F (175°C) until golden, 2–3 min per side.
  • Cook Beans — Sauté onion & garlic in a little oil. Add sausage, beans, broth, Cajun seasoning; simmer 20 min. Mash some beans for creaminess.
  • Assemble — Plate rice, top with beans and crispy shrimp. Sprinkle parsley. Serve hot.
