1 ½ pounds (700 g) ground beef (80/20 blend)
1 cup breadcrumbs (Panko or regular)
½ cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika (optional)
2 tablespoons chopped parsley
For the Caramelized Onion Gravy:
2 tablespoons butter
2 medium onions, thinly sliced
1 tablespoon flour
1 ½ cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Prepare the Meatloaf Mixture
1. Preheat oven to 375°F (190°C).
2. In a large bowl, mix breadcrumbs and milk; let sit for 5 minutes until absorbed.
3. Add ground beef, egg, chopped onion, garlic, ketchup, Worcestershire sauce, mustard, salt, pepper, paprika, and parsley.
4. Mix gently with your hands until combined (do not overmix).
Step 2: Shape and Bake
1. Transfer the mixture to a parchment-lined loaf pan or shape it by hand on a baking sheet.
2. Bake for 45–55 minutes, or until internal temperature reaches 160°F (70°C).
3. Remove from oven and rest for 10 minutes before slicing.
Step 3: Make the Onion Gravy
1. While meatloaf bakes, melt butter in a skillet over medium heat.
2. Add onions and cook for 10–12 minutes, stirring until golden and caramelized.
3. Sprinkle flour over onions, stir for 1 minute.
4. Gradually whisk in beef broth, then add Worcestershire sauce and soy sauce.
5. Simmer for 5–7 minutes until thickened. Season with salt and pepper.
Step 4: Combine and Serve
1. Pour the caramelized onion gravy over the sliced meatloaf.
2. Garnish with fresh parsley.
3. Serve with mashed potatoes, rice, or roasted vegetables.
