Ingredients:
● 4 boneless pork chops
● Salt and black pepper to taste
● 1 tablespoon olive oil
● ⅓ cup Dijon mustard
● ¼ cup honey
● 1 tablespoon whole grain mustard
● 1 tablespoon apple cider vinegar
● 2 cloves garlic, minced
● ½ teaspoon paprika
● Fresh parsley and lemon slices for garnish

Directions:
I. Preheat oven to 375°F (190°C). Season pork chops with salt, pepper, and paprika on both sides.
II. Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until lightly browned.
III. In a small bowl, whisk together Dijon mustard, honey, whole grain mustard, vinegar, and garlic.
IV. Place pork chops in a baking dish. Pour honey mustard sauce over the top, coating evenly.
V. Bake for 20–25 minutes or until the internal temperature of the pork reaches 145°F (63°C). Spoon sauce over chops halfway through baking.
VI. Garnish with parsley and lemon slices. Serve with roasted veggies or mashed potatoes.
