 Ingredients:

3 boneless, skinless chicken breasts, diced

2 tablespoons olive oil

½ yellow onion, diced

1 red bell pepper, sliced into strips

1 green bell pepper, sliced into strips

1 orange bell pepper, sliced into strips

1 packet fajita seasoning

2 cups Minute rice

2 cups chicken broth

8 ounces tomato sauce

1 cup creamy cheddar cheese sauce or queso (for topping)

 Directions:

1️⃣ In a large skillet over medium-high heat, warm the olive oil. Add diced onion and bell pepper strips. Sauté for 2–3 minutes, stirring occasionally.

2️⃣ Add the diced chicken breasts. Sprinkle fajita seasoning over everything. Cook for 7–8 minutes until chicken is cooked through (internal temp 165°F/74°C).

3️⃣ Stir in the Minute rice, tomato sauce, and chicken broth. Mix well and bring to a simmer. Let it simmer for 2 minutes.

4️⃣ Turn off the heat and let the skillet sit for a few minutes, allowing the rice to absorb the remaining broth.

5️⃣ Top with creamy cheese sauce to your liking. Serve hot and enjoy every bite!
