Shrimp and Cod in Creamy Garlic Sauce

INGREDIENTS:

4 cod fillets (fresh or desalted)

200 g shrimp

6-8 piquillo peppers

2 garlic cloves

1 onion

200 ml fish stock

100 ml cooking cream

Extra virgin olive oil

Salt and pepper

Fresh parsley

INSTRUCTIONS:

Prepare the cod:

If you use desalted cod, remove excess salt by soaking it for 1-2 days.

Brown the fillets in a pan with hot oil (3-4 minutes per side). Set aside.

Cook the sauce:

In the same pan, sauté the onion and garlic until tender.

Add the shrimp and cook for 2 minutes until they turn pink.

Add the peppers cut into strips and mix well.

Pour in the fish stock and let it reduce. Then, add the cream and cook over low heat until you get a creamy sauce.

Put the dish together:

Return the cod fillets to the pan and let it cook for 2-3 minutes to integrate the flavors.

Serve:

Serve hot with plenty of sauce and garnish with fresh parsley. Accompany with rice, potatoes or rustic bread.

 Tips:

A touch of lemon zest can enhance the flavors.

If you want a thicker sauce, mix a teaspoon of cornstarch with water and add it at the end.
