TOMATO SPINACH SHRIMP PASTA

Ingredients:

8 oz spaghetti

1 lb shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

4 cups fresh spinach

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Directions:

1️⃣ Cook the Pasta

Boil spaghetti in salted water until al dente.

Drain and set aside, reserving ½ cup of pasta water.

2️⃣ Sauté Garlic

Heat olive oil in a large skillet over medium heat.

Add garlic and cook for 1–2 minutes until fragrant.

3️⃣ Cook the Shrimp

Add shrimp to the skillet and cook for 2–3 minutes per side until pink and opaque.

Season with salt, pepper, and red pepper flakes (if using).

4️⃣ Add Veggies

Toss in the cherry tomatoes. Cook for 2–3 minutes until softened.

Add spinach and stir until wilted.

5️⃣ Combine It All

Add cooked spaghetti to the skillet.

Toss everything together, adding a splash of reserved pasta water if needed to loosen the sauce.

6️⃣ Garnish & Serve

Serve hot, topped with fresh basil and a generous sprinkle of Parmesan cheese.
