Raspberry Chipotle Party Ribs

Ingredients
For the Ribs:
• 1–2 racks St. Louis Style ribs (cut into individual ribs)
• 1 tbsp yellow mustard
• 3 tbsp BBQ rub
• Apple juice (for spritzing)
For the Glaze:
• 1 cup raspberry preserves
• 2–3 chipotle peppers in adobo, minced
• 1 tbsp adobo sauce
• 2 tbsp apple cider vinegar
• 1 tbsp honey (optional)
• Pinch of salt

 Instructions
1. Prep ribs: Remove silver skin, coat with mustard, then BBQ rub.
2. Smoke or bake at 250°F for 3–4 hrs, spritzing with apple juice as needed.
3. Make glaze: Simmer all glaze ingredients until smooth and thickened.
4. Brush ribs with glaze for the final 30 mins of cooking. Broil to caramelize if desired.
5. Rest & Serve: Let ribs rest, then serve with extra glaze on the side!
