Garlic and Lemon Roasted Chicken

 Ingredients:
1 whole chicken (about 4 lbs)
4 tablespoons olive oil or melted butter
1 lemon, halved
6 garlic cloves, minced
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried thyme (or rosemary)
1 cup chicken broth

 Directions:
Preheat
Heat oven to 400°F (200°C). Place a rack in a roasting pan.
Prepare Chicken
Pat the chicken dry with paper towels. Rub olive oil or butter all over the skin.
Season
Rub garlic, salt, pepper, paprika, and thyme over and under the skin if possible. Squeeze lemon juice over the chicken and place the lemon halves inside the cavity.
Roast
Pour chicken broth into the roasting pan. Place the chicken breast-side up on the rack. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the juices run clear and the internal temperature reaches 165°F (74°C).
Rest and Serve
Let chicken rest for 10 minutes before carving. Serve with roasted veggies or potatoes for a complete meal.
