Ingredients:

1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1 cup buttermilk
2 large eggs
1/4 cup unsalted butter, melted
1/4 cup honey
Oil for frying (vegetable or canola)
Honey Butter Glaze:

1/4 cup unsalted butter, melted
3 tbsp honey

Directions:

Prepare Batter:
In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, mix buttermilk, eggs, melted butter, and honey until smooth. Combine the wet and dry ingredients, stirring just until blended.

Heat Oil:
Heat about 2 inches of oil in a deep saucepan or skillet over medium heat. The oil should reach 350°F (175°C).

Shape and Fry Poppers:
Use a small cookie scoop or tablespoon to drop spoonfuls of batter into the hot oil. Fry in batches to avoid overcrowding. Cook for 2–3 minutes, turning occasionally, until golden brown and cooked through.

Drain:
Remove the poppers with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Make Honey Butter Glaze:
In a small bowl, mix the melted butter and honey.

Coat and Serve:
Brush the warm poppers generously with the honey butter glaze before serving.
