In a medium saucepan, bring water and salt to a boil. Slowly whisk in the grits to prevent lumps.

Reduce heat to low and simmer, stirring often, until the grits are thick and creamy—about 20–25 minutes for stone-ground or 5–7 minutes for quick grits.

Remove from heat and stir in butter until melted.

Add shredded cheese and stir until smooth and creamy. Adjust salt and pepper to taste.
