Mini oven baked pancake muffins

Ingredients:

2 ½ cups all-purpose flour

3 tbsp sugar

3 tsp baking powder

½ tsp salt

2 cups milk

2 tsp vinegar

2 eggs, slightly beaten

1 ½ tsp vanilla extract

3 tbsp melted butter

Toppings (blueberries, strawberries, chocolate chips, etc.)

Preheat oven to 375°F (190°C). Grease a mini muffin pan or line with paper liners.

In a small bowl, mix the milk and vinegar. Let it sit for 5 minutes (this makes buttermilk).

In a large bowl, whisk together flour, sugar, baking powder, and salt.

Add the eggs, vanilla, melted butter, and the milk mixture to the dry ingredients. Mix until just combined (don’t overmix).

Fill each muffin cup about ¾ full.

Add your favorite toppings on top (press them slightly into the batter).

Bake for 12–15 minutes (mini muffins) or until a toothpick inserted in the center comes out clean Let cool slightly and serve with syrup, honey, or chocolate sauce.
