Ingredients
For the fritters:
2 cups all-purpose flour
⅓ cup sugar
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
2 eggs
½ cup milk
1 tsp vanilla extract
3 tbsp melted butter
2 cups apples, peeled and diced (about 2 medium apples)
For the glaze:
1 cup powdered sugar
2–3 tbsp milk
½ tsp vanilla extract
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
In another bowl, mix eggs, milk, vanilla, and melted butter.
Combine wet and dry ingredients. Fold in the diced apples.
Scoop spoonfuls of batter onto the baking sheet (they don’t need to be perfect).
Bake for 15–18 minutes, or until golden and cooked through.
While warm, mix glaze ingredients and drizzle over the fritters.
Let the glaze set for a few minutes… then enjoy warm!
