Raspberry Cheesecake Parfaits Recipe
Ingredients (for 4 servings):
1 cup graham cracker crumbs (or digestive biscuits, crushed)
2 tablespoons melted butter
1 cup cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 1/2 cups fresh raspberries (plus extra for garnish)
Optional: chocolate shavings or mint leaves for decoration
Instructions:
Prepare the crust:
Mix the graham cracker crumbs with melted butter until evenly combined.
Spoon about 2 tablespoons of the mixture into the bottom of each serving glass or jar and gently press down to form a base.
Make the cheesecake filling:
In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
In another bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
Assemble the parfaits:
Spoon a layer of cheesecake filling over the crust.
Add a layer of fresh raspberries.
Repeat layers if your glass is tall: crust → cheesecake → raspberries.
Chill:
Refrigerate for at least 2 hours before serving to allow the flavors to meld.
Garnish & serve:
Top with extra raspberries, chocolate shavings, or mint leaves before serving.
