Amish Applesauce Cake



Ingredients:

2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon ground cloves
½ cup unsalted butter, softened
1 cup brown sugar
2 large eggs
1 ½ cups unsweetened applesauce
½ cup chopped walnuts or raisins (optional)
1 teaspoon vanilla extract

Directions:

Preheat oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
In a large bowl, beat the butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
Stir in the applesauce and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in walnuts or raisins if using.
Pour batter into the prepared baking pan and smooth the top.
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Let cool completely before serving. Optionally, dust with powdered sugar or drizzle with a light glaze.
