Instructions
1. Prepare the Apple Pie Filling:
In a medium saucepan, melt butter over medium heat.
Add diced apples, brown sugar, cinnamon, and nutmeg, stirring well.
Cook for 5-7 minutes, until apples are soft.
Mix cornstarch with water, then add to the apples to thicken the mixture.
Stir in vanilla extract, then remove from heat and let cool.
2. Make the Biscuit Dough:
Preheat oven to 400°F (200°C).
In a large bowl, whisk together flour, baking powder, salt, and sugar.
Cut in cold butter cubes using a pastry cutter or fork until the mixture resembles coarse crumbs.
Gradually add buttermilk, mixing just until dough forms.
3. Assemble the Apple Pie Biscuits:
Roll out biscuit dough on a floured surface to ¼-inch thickness.
Cut dough into circles using a biscuit cutter or glass.
Place a spoonful of apple pie filling in the center of half the biscuits.
