Instructions

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Cut the Potatoes
Slice the peeled potatoes into thin, even strips to ensure uniform cooking.

Soak for Crispiness
Place the potato strips in a bowl of cold water and soak for 30 minutes to remove excess starch.

Dry Thoroughly
Drain and pat the potatoes completely dry using paper towels or a clean kitchen towel.

Season the Fries
In a large bowl, combine olive oil, minced garlic, oregano, basil, salt, and black pepper. Add the dried potatoes and toss until evenly coated.

Arrange on Baking Sheet
Spread the seasoned fries in a single layer on the prepared baking sheet. Avoid overcrowding for maximum crispiness.

Bake
Bake for 25–30 minutes, flipping halfway through, until golden brown and crispy.

Add Parmesan
About 5 minutes before done, sprinkle Parmesan cheese evenly over the fries. Return to the oven until the cheese melts and lightly browns.

Garnish & Serve
Remove from the oven, garnish with chopped parsley, and serve immediately.

Tips & Variations

Extra crispy: Use a wire rack on the baking sheet for better air circulation

Spicy kick: Add chili flakes or smoked paprika

Herb swap: Use Italian seasoning instead of oregano and basil

Air fryer option: Cook at 380°F (193°C) for 15–18 minutes, shaking halfway
