Directions:
1. In a large mixing bowl, combine the cooked and flaked salmon, Panko breadcrumbs, minced onion, minced garlic, chopped red bell pepper, egg, grated parmesan, dijon mustard, salt, pepper, and chopped fresh dill.
2. Mix the ingredients thoroughly until well combined. The mixture should be moist but firm enough to hold together. If it’s too dry, add a little water; if too wet, add more breadcrumbs.
3. Shape the mixture into patties, about 2-3 inches in diameter, pressing firmly to ensure they hold their shape.
4. Heat a non-stick skillet or frying pan over medium heat. Add a small amount of oil or cooking spray to prevent sticking.
5. Cook the salmon patties in batches, if necessary, to avoid overcrowding the pan. Fry each patty for about 3-4 minutes on each side, or until golden brown and cooked through.
6. Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil.
7. Serve the salmon patties hot, with a side of tartar sauce, lemon wedges, or a fresh salad. Enjoy these flavorful and delicious salmon patties as a main dish or appetizer!
