Blueberry lemon loaf

-1&1/2 cup of all purpose flour

-1/2 cup caster sugar

-200g unsalted butter softened

-lime zest of two lemons

-3 small eggs or 2 large

-1/4 cup milk

-1tsp vanilla extract

-2TBS lemon juice

-2TBS sour cream

-1tsp baking powder

-1/4tsp bicarb soda

-1/4 tsp salt

-1/2 cup blueberries dusted in flour

-In a bowl mix together sugar and softened butter using a hand mixer whisk until pale and fluffy, add in lemon zest and whisk until combined.

-Next add in 1 gh at a time as you continue mixing until all eggs are mixed, add in milk,sour cream,vanilla extract,lemon juice and mix to incorporate,

-Next add in the dry ingredients,flour,baking,bicarbonate and salt, fold in and finally the blueberries.

-Bake for 50mins at 180 degree
