2 cups broccoli florets, finely chopped
½ cup feta cheese, crumbled
½ cup breadcrumbs (or almond flour for a low-carb option)
2 eggs, beaten
¼ cup grated Parmesan cheese
1 clove garlic, minced
½ tsp salt
½ tsp black pepper
½ tsp paprika (optional for extra flavor)
2 tbsp fresh parsley or dill, chopped
2 tbsp olive oil (for frying)

Prepare the Broccoli:

Steam or blanch the broccoli for about 2-3 minutes until slightly tender.
Drain well and chop finely.
Mix the Batter:

In a bowl, combine the chopped broccoli, feta cheese, breadcrumbs, eggs, Parmesan, garlic, salt, pepper, paprika, and fresh herbs.
Mix well until the mixture holds together. If too wet, add more breadcrumbs; if too dry, add a splash of water.
Form & Cook the Fritters:

Heat olive oil in a pan over medium heat.
Shape the mixture into small patties.
