STEP 1: PREP THE FILLING
In a large skillet over medium-high heat, cook the sliced beef until browned and cooked through. Remove and set aside.
In the same skillet, add a little oil if needed and sauté bell peppers and onions until soft and caramelized. Season with salt and pepper. Return the cooked beef to the skillet and mix to combine. Remove from heat.
STEP 2: PREP THE LOAF
Preheat oven to 375°F (190°C). Slice the Italian loaf in half horizontally, but do not cut all the way through—leave it hinged. Hollow out a bit of the inside to make room for filling.
Brush the inside generously with garlic butter.
STEP 3: STUFF AND BAKE
Layer half of the shredded provolone cheese inside the loaf, then spoon in the cheesesteak mixture. Top with remaining cheese. Close the loaf and wrap it tightly in foil.
Bake for 15–20 minutes, then unwrap and bake uncovered for another 5 minutes until the top is golden and crispy.
STEP 4: SLICE AND SERVE
Garnish with chopped parsley. Slice into portions and serve warm.
