Ingredients
– 1 lb ground beef
– 2 bell peppers (red, yellow, or green), diced
– 1 medium onion, diced
– 2 cloves garlic, minced
– 1 can diced tomatoes (or 1½ cups fresh)
– 1 cup tomato sauce or marinara
– 1 cup shredded cheddar cheese
– 1 cup shredded mozzarella cheese
– 1 tbsp olive oil or cooking oil
– 1 tsp Italian seasoning (or mix of oregano & basil)
– Salt & pepper to taste
– Fresh parsley or green onions for garnish (optional)

Instructions
1. Preheat oven to 375°F (190°C).
2. Cook beef: In a large skillet, heat oil over medium. Add ground beef, season with salt, pepper, and Italian seasoning. Brown until fully cooked, breaking it apart. Drain excess fat.
3. Sauté veggies: Add diced onion, bell peppers, and garlic to the skillet. Cook until softened (about 5 minutes).
4. Add tomatoes: Stir in diced tomatoes and tomato sauce. Simmer for 5 minutes to blend flavors. Adjust seasoning.
5. Layer casserole: In a greased baking dish, spread half the beef mixture. Sprinkle half the cheddar and mozzarella. Repeat with remaining beef and cheese.
6. Bake: Bake uncovered for 20 minutes or until cheese is bubbly and golden brown.
7. Garnish & serve: Sprinkle chopped parsley or green onions. Serve hot!
