Ingredients

For the Casserole:

1 lb (450 g) ground beef

1 ½ cups cooked white rice

1 small onion, finely chopped

1 green bell pepper, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 cup shredded cheddar cheese (plus extra for topping)

½ cup tomato sauce or diced tomatoes

½ tsp paprika

½ tsp black pepper

1 tsp salt (or to taste)

1 tsp olive oil or butter

¼ tsp chili flakes (optional for a mild kick)

Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Prepare the meat:

In a large skillet, heat olive oil. Add chopped onion and garlic, cook until fragrant.

Add ground beef and cook until browned, breaking it apart with a spoon.

  1. Add vegetables:

Stir in diced bell peppers and cook for about 3–4 minutes until slightly softened.

  1. Season and combine:

Add salt, pepper, paprika, and tomato sauce (or diced tomatoes). Stir well and let simmer for 5 minutes.

  1. Add rice:

Mix in cooked rice and half of the shredded cheese. Stir until everything is evenly combined and coated.

  1. Bake:

Transfer mixture into a baking dish. Top with remaining cheese.

Bake at 375°F (190°C) for about 15–20 minutes, or until cheese is melted and bubbly.

  1. Garnish:

Sprinkle with fresh parsley or cilantro before serving.
