Cheesy Ranch Potatoes and Sausage

Ingredients:
1.5 lbs baby red or Yukon gold potatoes, diced (skin-on is fine)
14 oz smoked sausage or kielbasa, sliced into rounds
2 tablespoons olive oil
1 tablespoon dry ranch seasoning (store-bought or homemade)
1½ cups shredded cheddar cheese (or a blend) 
2 tablespoons chopped green onions (optional, for garnish)
Salt & black pepper to taste

Instructions:
Preheat Oven:
Preheat your oven to 400°F (200°C).
Line a large baking sheet or 9×13 casserole dish with parchment or lightly grease it.
Prepare Potatoes:
In a large bowl, toss diced potatoes with olive oil, ranch seasoning, salt, and pepper.
Bake the Potatoes:
Spread seasoned potatoes in a single layer and roast for 20–25 minutes, flipping once halfway through, until starting to crisp and brown.
Add Sausage:
Remove the tray, scatter the sliced sausage evenly over the potatoes, and return to oven.
Bake for 15 more minutes or until the sausage is browned and potatoes are fork-tender.
Add Cheese & Finish:
Sprinkle shredded cheese evenly over the sausage and potatoes.
Bake another 5–7 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish with chopped green onions if desired.
Serve warm with sour cream, hot sauce, or a simple green
