Ingredients:

  • ½ cup unsalted butter
  • 2 cups packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups shredded sweetened coconut

Instructions:

  1. Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. Brown the Butter: Melt the butter in a saucepan over medium heat until it turns a golden amber color, stirring frequently to avoid burning. Remove from heat.
  3. Mix the Wet Ingredients: Add the brown sugar to the melted butter and stir until smooth. Let it cool slightly before mixing in the eggs and vanilla extract.
  4. Incorporate Dry Ingredients: Gradually add the flour, baking powder, and salt to the wet mixture. Stir until well combined.
  5. Add Coconut: Gently fold in the shredded coconut until evenly distributed.
  6. Bake: Pour the batter into the prepared baking dish, spreading it evenly. Bake for 40–45 minutes, covering with foil for the last 10 minutes to prevent over-browning.
  7. Cool and Serve: Allow the bars to cool completely before slicing. Serve as is or with a dusting of powdered sugar.
