Creamy Garlic Sauce Baby Potatoes

1 lb baby potatoes, halved
2 tbsp olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tbsp fresh parsley, chopped (optional)
Salt and pepper, to taste

Directions
1. Preheat your oven to 400°F (200°C) so it’s nice and hot when you’re ready to pop those potatoes in.
2. In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, and a good sprinkle of salt and pepper until every piece is coated.
3. Spread the potatoes out on a baking sheet, making sure they’re in a single layer for even roasting.
4. Bake for 20-25 minutes, or until the potatoes are tender and beautifully golden brown around the edges.
5. While the potatoes are roasting, heat the heavy cream in a saucepan over medium heat. Once it starts to warm up, stir in the grated Parmesan cheese, letting it melt into a smooth and creamy sauce.
6. When the potatoes are done, take them out of the oven and pour the creamy garlic sauce right over the top.
7. Sprinkle the freshly chopped parsley over your potatoes if you’d like a pop of color and extra flavor.
8. Serve them up warm and enjoy every bite.
