Directions:
1/ Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
2/ In a medium bowl, combine flour, powdered sugar, and salt. Add cold cubed butter and use a pastry cutter or your fingers to mix until the dough resembles coarse crumbs.
3/ Press the mixture into the bottom of the prepared pan to form an even crust.
4/ Bake for 10–12 minutes, or until lightly golden. Remove from the oven and set aside.
5/ In a separate bowl, whisk together the eggs, granulated sugar, flour, baking powder, lemon juice, lemon zest, and salt until smooth.
6/ Pour the lemon mixture over the baked crust.
7/ Bake for an additional 15–18 minutes, or until the filling is set and slightly golden around the edges.
8/ Allow the bars to cool completely in the pan before cutting into squares.
9/ Dust with powdered sugar before serving.
