Instructions:
1. **Marinate:** Pour the buttermilk into a shallow dish and soak the pork chops in it for at least 30 minutes (or up to 4 hours). This tenderizes the meat and adds flavor.
2. **Prep the coating:** In a large bowl or plate, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well.
3. **Coat the chops:** Remove pork chops from buttermilk one at a time, letting excess drip off. Dredge each chop thoroughly in the seasoned flour mixture, pressing down so the coating sticks well. Set aside on a plate.
4. **Heat the oil:** Pour about 1/2 inch of vegetable oil into a large skillet over medium-high heat. Heat until shimmering but not smoking.
5. **Fry:** Carefully place pork chops into the hot oil. Cook for about 4-5 minutes on the first side; don’t move them to get that crispy crust. Flip and cook another 4-5 minutes on the other side, or until golden brown and the internal temperature reaches 145Β°F (63Β°C).
6. **Drain & serve:** Transfer chops to a wire rack or paper towels to drain excess oil. Let them rest a few minutes.
Serve these crispy, juicy pork chops with your favorite breakfast sides like eggs and hash browns β€” or just dig in as is! Trust me, once you try them, fried pork chops will become your new go-to comfort food.
