Ingredients:
2 large potatoes (peeled and grated)
1 small onion (grated or finely chopped)
1/2 cup all-purpose flour
1 egg
1/2 teaspoon baking powder
Salt and pepper (to taste)
1/2 teaspoon paprika (optional, for extra flavor)
1–2 tablespoons chopped fresh parsley (optional)
Oil for frying

Instructions:
1. Prep the potatoes:
Grate the potatoes and place them in a clean kitchen towel. Squeeze out as much water as possible to make the fritters crispier.
2. Mix ingredients:
In a large bowl, combine the grated potatoes, onion, flour, egg, baking powder, salt, pepper, and paprika. Mix until well combined. Add parsley if using.
3. Heat the oil:
Pour about 1/4 inch of oil into a skillet and heat over medium-high heat.
4. Fry the fritters:
Scoop about 2 tablespoons of the potato mixture and flatten slightly. Fry in batches, 2–3 minutes per side, or until golden brown and crispy.
5. Drain and serve:
Place the cooked fritters on a paper towel-lined plate to drain excess oil. Serve hot with sour cream, ketchup, or your favorite dip!
