Make the cheese filling
Drain cottage cheese in a fine mesh strainer for 30 minutes.
Process in food processor until smooth.
Mix in vanilla, stevia, lemon zest and salt.
Refrigerate until needed.
Prepare the Apples
Core apples and cut into thin slices (1/8 inch thick).
Toss with lemon juice, cinnamon, and stevia.
Let sit 10 minutes to release juices.
Prepare the Dough
Preheat oven to 400°F (200°C)
Line a baking sheet with parchment paper.
Roll dough into 12 x 12-inch squares.
