Ingredients:

  • 3 large potatoes, peeled and boiled
  • 1 small carrot, grated (optional for sweetness and texture)
  • 1 small onion, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 egg
  • 3 tablespoons breadcrumbs (plus more for coating if desired)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Salt, to taste
  • 2 tablespoons olive oil (for pan-frying)

Instructions:

Prepare the potatoes

Boil the peeled potatoes in salted water until fork-tender. Drain and mash them in a large bowl until smooth.

Add the mix-ins

While the potatoes are still warm, add the grated carrot, chopped onion, parsley, garlic powder, paprika, black pepper, and salt. Mix until well combined.

Bind the mixture

Stir in the egg and breadcrumbs. The mixture should be firm enough to shape — if it feels too soft, add a little more breadcrumbs.

Shape the patties

With clean hands, scoop a portion of the mixture and form it into oval or round patties, about ½ inch thick. You can lightly coat them in extra breadcrumbs for extra crunch if you like.

Pan-fry to golden perfection

Heat olive oil in a non-stick pan over medium heat. Once hot, place the patties in the pan and cook for about 3–4 minutes per side, or until golden brown and crisp on both sides.

Drain and serve

Remove the patties and let them drain on a paper towel-lined plate. Serve warm with your favorite dipping sauce or a side salad.
