Boneless, skinless chicken breasts or thighs 2 pounds
Olive oil 1/4 cup
Lemon juice 3 tablespoons
Minced garlic 3 cloves
Red wine vinegar 1 tablespoon
Dried oregano 2 teaspoons
Ground cumin 1 teaspoon
Paprika 1 teaspoon
Ground coriander 1/2 teaspoon
Salt 1/2 teaspoon
Black pepper 1/2 teaspoon
For the Tzatziki Sauce:

Ingredient Quantity
Greek yogurt 1 cup
Grated cucumber (excess water squeezed out) 1/2 cucumber
Minced garlic 2 cloves
Lemon juice 1 tablespoon
Olive oil 1 tablespoon
Chopped fresh dill 1 tablespoon (or 1 teaspoon dried dill)
Salt and pepper To taste

Pita breads or flatbreads 4-6
Chopped tomatoes 1 cup
Sliced red onion 1/2 cup
Shredded lettuce 1 cup
Crumbled feta cheese (optional) 1/2 cup

Instructions:
Prepare the chicken marinade: Whisk together all marinade ingredients in a large bowl. Add chicken and coat well. Refrigerate for at least 1 hour, preferably 2-4 hours.
Make the tzatziki sauce: Combine all tzatziki ingredients in a medium bowl. Mix well and refrigerate.
Grill the chicken: Preheat grill or grill pan. Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F. Let rest before slicing
Assemble the gyros: Warm pita bread on grill or in skillet. Spread tzatziki sauce on pita. Add grilled chicken, tomatoes, red onion, lettuce, and feta cheese (if using).
Serve: Fold pita bread around fillings and serve immediately.
