Instructions:

Prepare the Ingredients:

If using fresh green chiles, roast them over an open flame or under a broiler until the skin is charred. Place the roasted chiles in a bowl covered with plastic wrap for 10 minutes to steam, then peel off the skin, remove the seeds, and chop them finely. If using canned or jarred green chiles, simply chop them and set aside.

Cook the Beef and Potatoes:

Heat 1 tablespoon of vegetable oil in a large pot or Dutch oven over medium-high heat. Add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes. Drain any excess fat.

Add the diced potatoes to the beef and cook for another 5-7 minutes, stirring occasionally, until the potatoes begin to brown slightly.

Sauté the Aromatics:

Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes, until the onion becomes translucent and fragrant.

Simmer the Stew:

Add the chopped green chiles, diced tomatoes (with their juices), beef broth, cumin, oregano, smoked paprika (if using), salt, and pepper. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and cover. Simmer for 20-25 minutes, or until the potatoes are tender and the flavors have melded together. Stir occasionally.

Final Adjustments:

Taste the stew and adjust the seasoning with more salt, pepper, or spices if necessary.

Serve:

Ladle the Green Chile Picadillo stew into bowls, making sure to include plenty of the hearty beef, potatoes, and green chile sauce.

Garnish with fresh cilantro if desired and serve with warm flour tortillas on the side for dipping. A squeeze of lime over the stew adds a fresh touch.

Enjoy this rich, flavorful Green Chile Picadillo Stew with the comforting combination of tender potatoes, savory beef, and spicy green chiles!
