A vibrant, healthy stir-fry using lean ground beef and fresh vegetables for a quick, flavorful meal.
 Ingredients
• 1 lb lean ground beef
• 1 large onion, chopped
• 2 bell peppers (red, yellow, or orange), chopped
• 1 cucumber, diced
• 1 cup cherry or grape tomatoes, halved
• ¼ cup chopped fresh parsley
• 2 cloves garlic, minced
• 2 tbsp olive oil
• 1 tsp dried oregano
• ½ tsp dried basil
• ¼ tsp red pepper flakes (optional)
• Salt & pepper to taste
• Lemon wedges for serving (optional)

1. Brown the Beef:
Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain excess fat.
2. Sauté the Veggies:
Add onion and bell peppers. Cook 5–7 minutes until softened. Stir in garlic and cook 1 more minute.
3. Add Remaining Ingredients:
Stir in cucumber, tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Cook 3–5 more minutes until veggies are tender-crisp.
4. Finish with Parsley:
Remove from heat. Stir in fresh parsley.
5. Serve & Enjoy:
Serve hot, with lemon wedges on the side if desired.
