Ham and Gruyere Scones

Ingredients:
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/4 tsp pepper
1/2 cup cold unsalted butter, cubed
1 cup grated Gruyère cheese
1/2 cup cooked ham, diced
1/2 cup heavy cream
1 egg, beaten (for brushing)

Instructions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
Add the cubed butter and, using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
Stir in the grated Gruyère cheese and diced ham.
Pour in the heavy cream and gently mix until the dough just comes together. Do not overmix.
Turn the dough onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round.
Using a sharp knife, cut the dough into 8 wedges and place them on the prepared baking sheet.
Brush the tops of the scones with the beaten egg for a golden finish.
Bake for 15-18 minutes, or until the scones are golden brown.
