Herb Butter Steak Tips with Roasted Potatoes



INGREDIENTS:


1 lb steak tips, cut into bite-sized pieces
Salt and pepper, to taste
2 tbsp olive oil, divided
1 lb baby potatoes, halved
3 tbsp unsalted butter, softened
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped


INSTRUCTIONS:


Roast Potatoes: Toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast at 400Β°F (200Β°C) for 25-30 minutes, until golden and tender.
Cook Steak Tips: Season steak tips with salt and pepper. Heat remaining olive oil in a skillet over medium-high heat. Sear steak tips for 3-4 minutes per side, until browned and cooked to desired doneness.
Make Herb Butter: Mix softened butter with garlic, parsley, and thyme.
Combine: Remove steak tips from heat, and top with herb butter, stirring until melted and coating the steak.
Serve: Plate steak tips with roasted potatoes, garnished with extra herbs if desired.
Notes:

Add a squeeze of lemon over the steak tips for a fresh finish.
