This simple homemade cheese is creamy, fresh, and easy to make using only 3 basic ingredients. You don’t need any fancy equipment — just a saucepan, a kitchen towel, and a love for real food.
Ingredients:
• 1 liter of whole milk
• 1 cup of plain, unsweetened yogurt
• Juice of 1/2 lemon
• Salt to taste
• 1 clean cotton kitchen towel (or cheesecloth)
Instructions:
1. Heat the Milk
Pour 1 liter of whole milk into a saucepan. Slowly heat it over medium heat until it’s just about to boil (around 80–90°C or 175–195°F). Stir occasionally to avoid burning.
2. Add Yogurt & Lemon Juice
Turn off the heat. Add 1 cup of plain yogurt and the juice of half a lemon. Stir gently until the mixture begins to curdle. You’ll see white curds separating from the yellowish whey — this means it’s working!

3. Let It Sit
Cover the pot and let it sit for about 10–15 minutes to finish curdling completely.
4. Strain the Curds
Line a colander with a clean cotton towel or cheesecloth. Carefully pour in the mixture to strain out the whey. Let it drain for about 30–60 minutes depending on how soft or firm you want the cheese.
5. Season & Shape
Once drained, add salt to taste. Mix well. You can then press it into a mold or bowl to shape it, or simply roll into a ball or pat into a disc. Wrap and refrigerate for at least 1 hour to firm up.
6. Serve & Enjoy
Slice or cube your homemade cheese and enjoy it fresh! It’s perfect in sandwiches, salads, or as a snack on its own.
Tips:
• For a firmer cheese, let it drain longer and press with a weight.
• Store in an airtight container in the fridge for up to 4–5 days.
• You can flavor your cheese with herbs, garlic, or pepper for extra variety.
