Start by soaking the chicken in buttermilk and hot sauce for at least 20 minutes (or up to 4 hours for extra tenderness).
In a bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.
Heat oil to 350°F (175°C).
